What these grades mean

Professional kitchens rank their roles in a ladder. Commi 3 is the entry position — the same job advertised elsewhere as kitchen helper, kitchen assistant or kitchen worker. Commi 2 and Commi 1 sit above it with more experience, and DCDP (Demi Chef de Partie) is the most senior in this batch, running a section of the kitchen.
